Meatball In A Pocket
It is mid-week, which means kids are at school and parents are at work. By the time everybody gets home from the office, the piano lesson, soccer practice, and anywhere else the daily activities take them, it is already late afternoon or even early evening. By now the whole family is starving, and there is nothing but some unwanted leftovers in the fridge.
For families with picky eaters, this situation may be difficult to face, as kids get grumpy when hungry, and adults may get irritated. But there is a way to use your leftovers in such a way, that there will be no protests from the family members. In half an hour they will be eating leftovers and not even know it, or care too much.
First, get some sandwich size pita bread from the pantry. Then open up the fridge and take those leftovers out to be used for funny, nutritious and delicious sandwiches. If you have a salad mix and dressing in the fridge, get it out as well, because it can be used either as stuffing or as a side dish.
Start off by grouping what can be used together for best flavor. Say there is some leftover roasted chicken, some grilled vegetables, maybe meatballs in zesty tomato sauce and some Italian sausage. Since you are in your own kitchen, take a look in the fridge again, or in the pantry, and see what sauces, spices, herbs or other toppings are hiding there. Grated parmesan, bacon bits, onion flakes, garlic salt, fresh basil are great options to infuse the flavours.
Now you can quickly prepare different stuffing. For one get the chicken chopped up, place it in a pan together with the grilled veggies, add a sprinkle of olive oil and heat it up. Do not fry it, as the chicken will get tough and the vegetables might burn to a crisp. In the meantime, place the meatballs in the microwave for a quick reheat, and grill the sausage with some melted cheese on top.
Take your pita bread, cut in half, open the pockets and put each half on a heated grilling pan for half a minute on each side. Now that you have everything nice and warm, it is time for quick putting together. Go for classics to be sure everybody finds something they like and it all gets eaten. For those sausages, spread the inside of the pita bread halves with a bit of mustard, maybe sprinkle some onion flakes, and place the sausage with cheese inside.
For your meatball monsters, coat the inside of the pita bread with sauce, place a few meatballs in and cover them with grated parmesan. Add some fresh basil for that extra Italian taste. For a chicken and grilled vegetables salad, prepare the pita bread with either a salad dressing or a bit of mayo, spoon the mixture in and maybe add some bacon bits on top.
To make sure the family eats healthy, mix a quick and simple salad in a serving bowl, place all the sandwiches on a platter and get started. This kind of dinner is quick, simple and nutritious. And you will have no more leftover food in the fridge to worry about. Best thing is, you can make stuffed pita bread sandwiches using all kinds of leftovers, or just make them with traditional sandwich toppings for a quick snack.
